31 Dec Organic Blueberry & Cherry Hemp Seed Loaf
For the last day of 2017, I’ve seriously got the baking bug in my bones. It’s been ignited and there’s no turning back now. So, with an abundance of summer berries overflowing in my fridge I’m inspired to make a Blueberry & Cherry Hemp Seed Loaf. For a non-baker, I love free styling and just intuitively going with the flow. The potential is limitless when you just say “yes” and step into the unknown.
Once fresh out of the oven I lathered a slice in Hemp Seed Butter and paired it with a blueberry cherry mix that was heated to create a syrup. This baby was all organic. No added sugar, just the fruit’s natural juices. It was filled with chunks of berries to really capture the heartiness of rustic food. At the core, it was home-style comfort baking that just warmed the soul. It’s the perfect breakfast to eat outside, watching the sunrise, listening to the chirping birds and just reflecting on an epic year.
- 1 1/2 cups Hemp Flour
- 1 cup of Linseed/Flaxseed Meal
- 2 tbsp of Slippery Elm Bark
- 1 – 1/2 tbsp of Collagen Protein
- 1 cup of Hemp Seed Hearts
- 1/2 carton of Egg Whites
- 1 tsp Cherry Vinegar
- 1 tsp of Baking Soda
- 1 pinch of Salt
Preparation & Directions
In one bowl mix together your dry ingredients.
Lately, my legs have been cramping up in the middle of the night, so I also added a pinch of Celtic Sea Salt to ease my muscles. To ensure your purchasing the “good stuff” this salt is naturally moist and off-white/greyish in colour – I usually use Himalayan but thought I’d mix it up a little.
Then throw in your blueberries whole and slice those deep red cherries into halves, quarters – whatever you fancy.
In a seperate bowl whisk your egg whites until they’re nice and fluffy.
Then, slowly fold in the dry mixture. Be sure not to knock all the air out of the egg whites when you’re folding and binding it together.
When your ready pour the mixture into a baking tin.
Today, I poured a whole lot of Hemp Hearts on top to give the loaf a touch of love and magic to visually tickle your tastebuds.
With your tin in the oven, the waiting game begins!
